Pad See Ew
Pad See Ew is an extremely popular Thai food and I honestly feel is the sexiest looking Thai dish ever. I could just eat this with my eyes.The use of wide rice stick noodles gives a chewy texture and that glossy look which is extremely appetizing. See Ew means soy sauce and pad means to stir fry so pad see ew basically means soy sauce stir fry.
Ingredients
Sauce
- 2 tbsp dark soy sauce
- 2 tbsp vegan oyster sauce
- 2 tsp light soy sauce
- 2 tsp white vinegar
- 2 tsp sugar
- 4 tbsp water
Stir Fry
- 10 oz dried wide stick noodles.
- 3 tbsp peanut or vegetable oil
- 2 cloves garlic cloves, very finely chopped
- 3 shallots, finely chopped
- 4 stems and leaves Chinese broccoli
- 1 cup pan fried tofu.
- Salt and pepper to taste
Directions
- Place the wide stick noodles in hot water for 5 to 7 min. Strain and keep it aside. You can add a tsp of oil to keep it from sticking. Don’t keep the noodles laying around for a long time or it will stick to the wok.
- Press the tofu to remove all the excess water. I usually place it in between 2 plates and keep a heavy object on top of it. Leave for 1 hour and then blot it with a paper towel. Pan fry them with a few tsp of oil and brown them on both sides.
- Trim the ends of Chinese broccoli. Separate leaves from stems. Cut thick stems in half vertically so it can cook up fast. If you cannot find Chinese broccoli just go ahead and use regular broccoli or broccolini
- Heat 1 tbsp oil in a very large heavy based skillet or wok over high heat.Add garlic and shallots and cook it for few seconds.
- Add Chinese broccoli stems, cook until tender.
- Add Chinese broccoli leaves, cook until just wilted.
- Add noodles and Sauce. Toss as few times as possible to disperse Sauce and make edges of noodles caramelize.
- Add few tbsp of water if needed.
- Add Salt and pepper as per your taste.
- Quickly add fried tofu and toss again. Serve immediately!
